What are moong sprouts?
Moong sprouts begin with the simple mung bean—also called moong dal, green gram, or moong beans.
With just a soak in water and a little time, these beans wake up and send out crisp, juicy shoots.
The transformation is incredible: you start with a dry pantry staple and end up with a living food, bursting with vitality.
Mung bean sprouts are slightly larger and crunchier than typical salad sprouts, but still mild and pleasant, making them perfect for salads, curries, and snacks.
Around the world, these sprouts are loved for their texture, subtle sweetness, and gentle, nourishing energy.

How to sprout mung beans at home
Making moong sprouts at home is straightforward and rewarding.
Here’s a simple guide:
- Soak mung beans in a bowl of cold water for 12 hours or more.
- Drain off all the water. Rinse 2-3 times. Leave the beans in the bowl.
- Cover the bowl with a clean tea towel and leave for 8 hours.
- Rinse sprouts in water and drain off water carefully. Give the sprouts a shake, so that the same sprouts are not stuck on the bottom of the bowl.
- Cover again for 8 hours, then rinse and shake.
- Repeat step 5 until the tails are about ½-inch long. (If you continue sprouting longer than 2-3 days, you risk mold.)
You can decide how long you want the sprout tails to be, since the length mostly affects texture, not nutrition.
Keep in mind that the longer you let them sprout, the higher the risk of mold.
Personally, I recommend sprouting for no more than 2–3 days before eating them or transferring the sprouts to the fridge.
