Celery calories
The first thing that comes to mind when I think of celery is that it takes more calories to crunch down a stalk of celery than it gives you.
This true fact is perfect for loosing weight, but why eat it at all if celery takes more than it gives? Fortunately, calories are not the only thing foods do for the body.
Health benefits
Celery has tremendous anti-inflammatory health benefits, especially for the digestive tract itself.
Celery is also a non-starchy vegetable, so Paleo people and the other low-carb dieters need not worry about eating it.
There’s also the matter of antioxidants, like Vitamin C, flavonoids, and about a dozen others. That’s for cancer protection.
I could say tons more about celery’s health benefits, but I think you get the idea.
There is nothing bad you can really say about this elegant vegetable’s health pedigree. Remember, I mentioned earlier it takes more calories to eat it than celery actually contains?

As for celery’s other star qualities of taste and texture, I cannot say enough about how refreshing it is to munch a bit of raw celery in winter salads (especially along with grape tomatoes), or how enjoyable this vegetable is in a stir-fry or vegetable sauté.
I have a habit of cooking a bunch of “vegetables” as part of dinner.
Rather than follow a recipe, I’ll often choose whatever’s in the fridge that needs to be used, as long as the vegetables go together.
Long-lasting stalks of celery are always a welcome addition to the medley.

Really liked this simple soup as I love celery. I wonder about putting little cream in it but isn’t needed. I have never used Daikon radish and it was great subtle flavor.
